  • 200g Castleford wholewheat flour

  • 200g sugar

  • 200g yogurt

  • 100g unsalted butter

  • 100g dried cranberries

  • 2 eggs

  • Zest of 1 orange

  • 1tsp baking powder

  • ¾tsp baking soda

  • ½ tsp salt

  • 8oz Castleford wholewheat flour

  • 8oz sugar

  • 8oz yogurt

  • 4oz unsalted butter

  • 4oz dried cranberries

  • 2 eggs

  • Zest of 1 orange

  • 1tsp baking powder

  • ¾tsp baking soda

  • ½ tsp salt

  1. Preheat the oven to 220°C gas 7.  Sift together flour, baking powder, baking soda and salt, set aside.

  2. In another bowl beat butter and sugar until creamy.  Add eggs and orange zest, beat well.

  3. Add dry ingredients alternately with yogurt, stirring after each addition.

  4. Stir in the cranberries.  Pour the batter into a 200mm/8" baking tin.

  5. Bake the cake for 45 mins, or until a skewer inserted into the middle comes out clean.

  6. Let the cake cool for about 10 minutes.

  7. Make a pourable topping using icing sugar and the juice of the orange and drizzle over the cooled cake.
